Calls aren’t normally recorded. SMS piggy-backs on the control messages. Those are routinely retained, including SMSes, which tower was in use at the time, which sector antenna and distance (ie, location), and so on. So you can delete those all you want from your phone, the GSM operator probably still has years worth of your texts. And they’re not encrypted by the time they get off the air and hit the operator’s wired infrastructure. Good luck “deleting SMS history”.
